This article was obviously written by someone who has never tried going gluten free, and does not care to. In fact, I picture the person as being sick and over weight and in total denial.
Take it from someone who use to be like that, until I was forced to change.
Going gluten free can be the best thing for your health. Doing so has totally changed my digestive issues and I have been able to lose weight and keep it off for 4 years.
So making fun of this “fad” may make those who refuse to change their habits think they are superior, but in the end, they are the ones who pay.
We are all born with a set amount of digestive enzymes. If we do not restore these enzymes by eating probiotic rich, and nutrient dense foods, eventually we no longer have the ability to digest certain foods, mostly grains and proteins. The result is all kinds of degenerative disease, starting with simple stomach bloating after eating, to cancers.
Once you try going gluten free, and feel better, you will never go back.

I certainly won’t. It’s not that big a deal to try it for long enough to see if it helps. If it doesn’t, fine. Go back to what you were eating before. Dearest and I went GF and both began to feel more energetic and less bloaty, so we stuck with it and, at this point, I don’t even want those old foods any more.

Cry me a river. Our neighbors escaped from Communist China with NOTHING.
They started out in rental housing and rental restaurant. They built their business up until they could buy a beater of a building and, year by year, as they could afford the materials, they did the renovations themselves evenings and weekends until they could move in to the apartment upstairs.
Then they worked on the downstairs until they had a kitchen and restaurant space up to code and could end their lease on the rental and open up in their own place.
Their daughter is going to medical school. The son is taking over more and more of the business as his folks get on in years.
