DIABETES: I had a request to revisit the resistant starch issue for a diabetic who loves her rice. The starch in cooked rice is easily digested in the small intestines, causing a rise in blood sugar. But when cooked rice is cooled, the starch changes into a form that can not be digested. Instead, it passes through the small intestine, then is fermented in the large intestine. In addition to not causing a blood sugar spike, fermented resistant starch greatly benefits your gut biome.   1. Thanks for the information about resistant starch. I’ve been cooking my rice ahead of time for years, because I like to do a really big pot of it and then freeze it in smaller containers to use when I need them. I also like to soak the grains in filtered water overnight before I cook them, to rid them of phytic acid.
