The sample sentence for #2 — Does it go with the definition? What am I missing? This is a well respected "non-system" book that has been used by homeschoolers and private schools for years. She is in Public School.

The sample sentence does fit with the definition given, but the definition is incorrect. A capitalist is not simply a wealthy person. If that is the current definition, it’s a recent definition. A capitalist is someone who invests capital in order to make money. They may be rich, but may not be. No wonder OWSers hate capitalism if this is what they were taught in school.
